2. Boil covered until tender in 3 parts water to 1 part lentils using little running water. Salt helps to remove any small imperfections or dirt particles you may have missed.
Yield: 1 cup of dried lentils = 2 cups of cooked lentils.
3. Bring 1 cup of lentils and 2 cups of water to a boil. Reduce and heat and simmer 15 to 20 minutes until tender. Add 1 tsp of vegetable oil if desired.
